In the second week of December, Spain celebrates various gastronomic festivities that highlight the richness of its culinary heritage. For example, in Estepa, Seville, the centuries-old tradition of mantecados and polvorones, Christmas sweets dating back more than 150 years, is commemorated. This production not only evokes the festive spirit, but also boosts the local economy, generating employment for around 2,200 people and reaching a production of more than 15 million kilos.
In addition, in the Valencian Community, the Feria del Dulce Artesano, Peladillas y Turrones de Casinos is held, where traditional products such as turrones and peladillas, essential on Spanish Christmas tables, are presented.
The Salmon with vegetables and crunchy ham is an explosion of textures and flavours. The freshness of the fish, the softness of the vegetables and the crunchy touch of the ham make this dish an ideal choice to end the autumn.
