In autumn, nature gives us a great variety of mushrooms, which are the protagonists in many cuisines of this season. In addition, 11 November is Saint Martin's Day, a festival that in many regions of Spain marks the start of the pig-slaughtering season, giving rise to delicious traditional recipes such as sausages, black pudding and stews that accompany us through the cold winter. In some areas of Galicia and Asturias, it is a tradition to prepare the 'magosto', a celebration in which chestnuts are roasted over an open fire and enjoyed in company, evoking a homely atmosphere and family togetherness.
Autumn is, without a doubt, a time to reconnect with the most authentic flavours of our land, make the most of seasonal products and enjoy the most traditional recipes in good company.
