Also known as cold cream of leek soup, this is a classic French soup perfect for enjoying on hot days. Its creamy texture, mild flavour and pale green, almost white colour make it a light and refreshing starter or main course.
Ingredients (for 4 people):
- 4 leeks (white part only)
- 2 medium potatoes
- 1 onion
- 50 g butter
- 700 ml chicken stock
- 200 ml cooking cream
- Salt to taste
- White pepper to taste
- Freshly chopped chives for garnish
Elaboration:
- Prepare the ingredients: Wash the leeks and cut into thin slices. Peel the potatoes and cut into small pieces. Peel and chop the onion.
- Cook the vegetables: In a large saucepan, melt the butter over medium heat. Add the onion and leeks and fry for about 10 minutes, stirring occasionally, until tender but not browned.
- Add the potatoes and the stock: Add the chopped potatoes and pour in the chicken stock. Bring the mixture to the boil and then reduce the heat to simmer for about 20-25 minutes, or until the potatoes are cooked through.
- Grind the mixture: Remove the pan from the heat and allow the soup to cool slightly. Then puree the mixture with a hand blender or in a glass blender until smooth and homogeneous.
- Add the cream: Add the cream and mix well. Season with salt and white pepper to taste. Chill the vichyssoise in the refrigerator for at least 2 hours before serving.
- Serve: Serve the vichyssoise well chilled, garnished with a sprinkling of freshly chopped chives.
