This turkey cold meat is a light and delicious option, full of flavour thanks to the combination of vegetables. It is accompanied by a classic homemade fried tomato that gives it a special touch. Ideal for a healthy meal, either as a main course or for a light supper.
Ingredients:
- For the turkey cold meat:
- 500 g turkey breast, minced
- 1 small red pepper
- 1 small green pepper
- 1 small onion
- 1 carrot
- 2 cloves garlic
- 2 eggs
- 50 ml of liquid cream
- Salt and pepper to taste
- Extra virgin olive oil
- For the homemade fried tomato:
- 500 g ripe tomatoes (or 1 can of crushed tomatoes)
- 1 small onion
- 1 clove of garlic
- 1 teaspoon sugar
- Extra virgin olive oil
- Salt and pepper to taste
Elaboration:
- For the turkey cold meat:
- Preparation of the vegetables: Finely chop the peppers, onion, carrot and garlic. In a frying pan with a little olive oil, sauté the vegetables over medium heat until tender, about 8-10 minutes. Set aside and leave to cool.
- Cold meat mixture: In a large bowl, place the chopped turkey breast. Add the sautéed vegetables, beaten eggs, cream, salt and pepper. Mix well until all ingredients are combined.
- Bain-marie baking: Pour the mixture into a plumcake mould, previously greased with a little olive oil. Cover the mould with aluminium foil. Place the pan into a larger pan with hot water, making sure that the water covers at least half of the pan. Bake at 180°C for 45-50 minutes, or until the cold meat is cooked through.
- Cool and serve: Once cooked, allow to cool completely in the mould. Then unmould and cut into slices when ready to serve.
- For the homemade fried tomato:
- Preparation of the sofrito: In a large frying pan, heat a splash of olive oil and add the finely chopped onion and garlic. Cook over medium heat until golden brown.
- Cooking the tomatoes: Add the crushed tomatoes (if using fresh tomatoes, peel and crush them beforehand). Add a pinch of sugar to balance the acidity and season with salt and pepper to taste. Simmer for about 30 minutes, stirring occasionally, until the sauce thickens and turns a darker colour.
- Final texture: If you prefer a smoother sauce, you can blend it with a hand blender to achieve a finer texture.
- Suggested presentation:
- Place one or two slices of turkey cold meat on a plate and serve with a generous spoonful of homemade fried tomato on the side. You can serve this dish cold or warm, according to your preference, accompanied by a light salad or toasted bread.
