Trout and smoked salmon pudding is an elegant and flavourful dish, ideal for surprising your guests on a special occasion. With a smooth and creamy texture, accompanied by mushrooms and vegetables, this dish is a delicious option as a starter or main course.
Ingredients (for 4 people):
- 300 g fresh trout, cleaned
- 100 g smoked salmon
- 3 eggs
- 200 ml cooking cream
- 1 small onion
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- 200 g mixed mushrooms
- 1 small courgette
- 2 sprigs of bimi (optional)
- 250 g mayonnaise
- 50 g piquillo peppers (canned)
- 50 g Greek yoghurt
Elaboration:
- Preheat the oven to 180 °C.
- In a frying pan, heat a little olive oil and sauté the chopped onion and garlic until golden brown and tender.
- In a bowl, crumble the fresh trout and add the chopped smoked salmon. Stir in the sautéed onion and garlic.
- Add the eggs, cream, salt and pepper to taste. Mix all the ingredients well until a homogeneous mixture is obtained.
- Grease a baking tin with olive oil and pour the mixture into it. Cover with aluminium foil.
- Bake in a bain-marie for 50-60 minutes, or until the pudding is set. To check for doneness, insert a toothpick into the centre; if it comes out clean, the pudding is done.
- Once baked, remove the foil and allow to cool slightly before unmoulding.
- Place the mayonnaise, the drained piquillo peppers and the yoghurt in the bowl of a blender. Blend until smooth and homogeneous.
- Cover the pudding with the mixture and bake in the oven with the broiler until golden brown and "soufflé".
- While the pudding is baking, dice the courgette and sauté together with the mushrooms in a pan with a little olive oil. Cook until the vegetables are tender. Add salt and pepper to taste.
- Sauté the bimi sprigs in the same pan for a few minutes until lightly browned.
- Serve the pudding with the mushrooms, courgette and sautéed bimi sprigs.
Suggested presentation:
- Garnish the pudding with a few sprigs of bimi and serve with a light pepper sauce to enhance the flavour.
- Serve with a green salad to balance the creaminess of the dish.
Additional advice:
- If you want a more intense flavour, you can add a teaspoon of chopped fresh dill to the mixture before baking.
- For a lighter option, use low-fat cooking cream.
- You can prepare the pudding in advance and warm it slightly before serving, which makes it ideal for dinner parties with plenty of time to spare.
