Ingredients:
- 1 loaf of bread from the previous day (preferably baguette bread or similar)
- 1 litre of whole milk
- 200g sugar
- 1 cinnamon stick
- Lemon peel
- 4 eggs
- Mild olive oil or sunflower oil for frying
- Icing sugar and cinnamon powder for sprinkling (optional)
Instructions:
- In a large saucepan, heat the milk together with the cinnamon stick, lemon zest and sugar over medium heat. Let the mixture boil gently for a few minutes, then remove from the heat and let it cool slightly.
- Cut the bread into slices about 2 cm thick and place them on a large platter.
- Pour the hot milk over the slices of bread, making sure that all the slices are well soaked. Let the bread soak in the milk for at least 30 minutes, turning them occasionally so that they are evenly soaked.
- After the soaking time, beat the eggs in a deep dish.
- Heat plenty of oil in a large frying pan over medium-high heat.
- Dip each slice of bread soaked in milk into the beaten egg, making sure it is well coated.
- Fry the breaded bread slices in the hot oil until golden brown and crispy on both sides, about 2-3 minutes on each side. Drain on kitchen paper to remove excess oil.
Presentation:
- Once fried, you can sprinkle the torrijas with a mixture of icing sugar and cinnamon if you wish, accompany them with some red fruit or cover them with whipped cream (torrijas floreadas) and enjoy this delicious traditional Spanish dessert.
