Ingredients (for 6 people):
- 5 apples (preferably Golden)
- 100 g butter
- 200 g sugar

- For the shortcrust pastry:
- 200 g flour
- 100 g cold butter
- 1 egg
- 1 tablespoon sugar
- 1 pinch of salt
Elaboration:
- Prepare the shortcrust pastry: In a bowl, mix the flour with the pinch of salt and the sugar. Add the cold butter cut into small cubes and work the mixture with your fingertips until you get a sandy texture. Add the egg and mix until a homogeneous dough is formed. Roll into a ball, wrap in cling film and refrigerate for at least 30 minutes.
- Preheat the oven to 180ºC.
- Peel and quarter the apples, removing the core.
- In an ovenproof frying pan, melt the butter over medium heat and add the sugar. Cook until the sugar melts and forms a golden caramel.
- Place the apple quarters in the pan with the caramel, distributing them evenly. Cook over medium heat for about 10 minutes, turning the apples so that they caramelise well on both sides.
- Add the pine nuts and slivered almonds on top of the apples.
- Roll out the shortcrust pastry with a rolling pin until it is large enough to cover the pan. Place the dough on top of the apples and tuck the edges into the pan. Prick the dough lightly with a fork.
- Bake the tart for 25-30 minutes or until the crust is golden brown and crisp.
- Remove the pan from the oven and leave the cake to rest for 5 minutes. Then carefully turn the cake out onto a large plate to unmould.
Suggested presentation:
- Serve the tarte tatin with a dollop of whipped cream or crème fraîche to add a creamy touch that contrasts perfectly with the caramel.
- Garnish with some fresh mint leaves for a touch of colour and freshness.
