Swiss rolls, also known as milk bread, are a sweet and fluffy bread characterised by their soft texture and slightly sweet taste. They are perfect to enjoy for breakfast, as an afternoon snack or as an accompaniment to a cup of coffee or tea.
Ingredients:
- 500 g of strong flour
- 25 g fresh yeast (or 7 g dry yeast)
- 250 ml warm milk
- 75 g butter at room temperature
- 100 g sugar
- 2 eggs
- 1 pinch of salt
- zest of 1 lemon (optional)
- 1 beaten egg for painting
- Pearled sugar for decoration
Elaboration:
1. Prepare the dough:
- Crumble the fresh yeast into the warm milk and leave to stand for a few minutes until dissolved (if using dry yeast, mix directly with the flour).
- In a large bowl, sift the flour and make a well in the centre.
- Add the sugar, the pinch of salt, the eggs and the butter at room temperature to the well. You can also add the lemon zest if you want to give it an aromatic touch.
- Pour the milk with the yeast into the well.
2. Knead:
- Mix all the ingredients together to form a dough.
- Knead for about 10-15 minutes until the dough is smooth and elastic. If the dough is too sticky, you can add a little more flour, but do not overdo it.
3 Fermentation:
- Place the dough in a lightly greased bowl, cover with a damp cloth and leave to rest in a warm place for about 1-2 hours, or until it has doubled in size.
4. Form the buns:
- Degas the dough (press lightly to remove air) and divide it into portions of about 70-80 grams each.
- Form the dough portions into balls and place them on a baking tray lined with baking paper, leaving enough space between them.
- Cover with a cloth and leave to stand again for 30-45 minutes until they have regrown.
5. Bake:
- Preheat the oven to 180°C.
- Brush the buns with the beaten egg and decorate with pearl sugar on top.
- Bake for about 15-20 minutes, or until golden brown.
- Remove the buns from the oven and leave to cool on a wire rack.
Advice:
- You can fill the Swiss rolls with custard, chocolate or jam before baking to give them a special touch.
- If you don't have pearl sugar, you can use regular sugar, but pearl sugar will give a more traditional and attractive finish.
