These milk muffins are soft, fluffy and perfect for filling with sweet or savoury ingredients. They are ideal for snacks, breakfasts or family gatherings, and their light texture makes them irresistible.

Ingredients (for 12 rolls):

  • 500 g of strong flour
  • 250 ml warm milk
  • 50 g butter at room temperature
  • 50 g sugar
  • 1 egg
  • 10 g fresh yeast or 5 g dry baker's yeast
  • 1 teaspoon salt
  • Beaten egg for painting
  • Optional fillings: ham, cheese, butter, jam, cocoa cream, etc.

Elaboration:

  1. Preparing the doughDissolve the yeast in the warm milk. In a large bowl, mix the flour with the sugar and salt. Form a volcano in the centre and add the egg, the milk with the yeast and the butter. Mix until well blended.
  2. KneadTransfer the dough to a clean surface and knead for 10-15 minutes until the dough is elastic and smooth. If you use a mixer, 8-10 minutes will be enough.
  3. First fermentationForm the dough into a ball and place it in a lightly greased bowl. Cover with a clean cloth and leave to rise in a warm place until doubled in size, about 1 hour.
  4. Form the rollsDivide the dough into 12 equal portions. Form each portion into balls and place them on a baking tray covered with parchment paper, leaving space between them. If they are to be filled before baking, flatten each portion slightly, add the desired filling and close tightly into a ball.
  5. Second fermentationCover the rolls with a cloth and let them rest for 30-40 minutes until they rise again.
  6. BakingPreheat the oven to 180 °C. Brush the rolls with beaten egg for a glossy finish. Bake for 15-18 minutes or until golden brown.
  7. ServeLeave to cool on a wire rack before filling with sweet or savoury ingredients to taste.
