Braised lentils with chorizo and vegetables are a classic of traditional cuisine that never fails. This comforting dish combines the tender texture of the lentils with the deep flavour of the chorizo and the freshness of the vegetables, ideal for colder days or to enjoy a home-cooked meal full of flavour. Ingredients (for 4 people):
- 300 g lentils
- 1 carrot
- 1 green pepper
- 1 onion
- 2 cloves garlic
- 150 g chorizo
- 1 bay leaf
- 1 ripe tomato
- 1 stalk celery
- Extra virgin olive oil
- Salt and pepper to taste
- Water or vegetable stock
Elaboration:
- Wash the lentils well and drain them. Peel and slice the carrot, chop the pepper, onion, celery and tomato. Peel and chop the garlic cloves.
- In a large pan, heat a drizzle of olive oil and sauté the onion, pepper, celery and garlic until soft.
- Add the chopped tomato and cook for a few more minutes until it breaks up. Add the sliced chorizo and the carrot, and fry everything together for a couple of minutes.
- Add the lentils to the pan along with the bay leaf and cover with water or vegetable stock. Cook over a medium heat for about 30-40 minutes, stirring occasionally, until the lentils are tender. Adjust salt and pepper to taste.
- Remove the bay leaf before serving.

Additional advice:
- You can add a diced potato along with the lentils to make the dish more complete.

- Serve the stewed lentils piping hot in a deep dish, garnished with a few slices of chorizo on top and a drizzle of extra virgin olive oil. Serve with a good piece of bread to dip in the delicious sauce.
