Ingredients (for 4 people):
- 200 g cooked and mashed pumpkin
- 100 g cake flour
- 80 g brown sugar
- 50 g chopped walnuts
- 30 g sultanas
- 1 teaspoon baking powder
- 1 teaspoon cinnamon powder
- 1 pinch of nutmeg
- 2 eggs
- 50 ml sunflower oil
Elaboration:
- In a bowl, mix the cooked and mashed pumpkin with the brown sugar, eggs and sunflower oil. Stir well until the mixture is smooth.
- Add the sifted flour together with the baking powder, cinnamon and nutmeg. Stir until all the ingredients are well integrated.
- Stir in the chopped walnuts and sultanas, mixing well so that they are evenly distributed in the batter.
- Lightly grease individual steamer-safe containers and pour the mixture into them, filling them about three-quarters full.
- Steam for 25-30 minutes or until a toothpick inserted comes out clean.
- Leave to cool before serving and sprinkle with a little cinnamon powder on top.
Suggested presentation:
- Serve the cups warm with a sprinkling of icing sugar and a cinnamon stick for decoration.
- Serve with a scoop of vanilla ice cream or Greek yoghurt for a perfect contrast of temperatures and textures.
