Square croquettes of salmon and green beans.

These salmon and green bean croquettes, with their characteristic square shape, are crispy on the outside and soft on the inside, ideal as an appetizer or starter.

Ingredients:

  • 300 g fresh or canned salmon (preferably boneless and skinless)
  • 150 g green beans
  • 50 g flour
  • 50 g butter
  • 500 ml milk
  • 1 small onion, finely chopped
  • Breadcrumbs
  • 2 eggs
  • Olive oil for frying
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)

Elaboration:

  • Cooking the green beans and salmonCook the green beans in salted water for about 5-7 minutes until tender. If using fresh salmon, sauté it in a pan without oil for a few minutes. If canned, simply drain well. Flake the salmon and set aside.
  • Prepare the béchamel sauceIn a frying pan, melt the butter and sauté the chopped onion until transparent. Add the flour and stir well for 2 minutes to cook it. Gradually add the milk while stirring to avoid lumps. Cook the béchamel sauce over a medium heat until it thickens.
  • Add the salmon and beansOnce the béchamel sauce is thickened, add the crumbled salmon and chopped green beans. Add salt, pepper and a little parsley if desired. Cook together for a few more minutes to allow the flavours to integrate. Chill the mixture in the refrigerator in a square dish protected with cling film for at least 2 hours or until firm.
  • Form the croquettesOnce the dough is chilled, cut the mixture into even squares. Dredge each square in flour, beaten egg and breadcrumbs until completely coated.
  • Frying the croquettesIn a frying pan with plenty of hot oil, fry the croquettes until golden brown on all sides. Place them on absorbent paper to remove the excess oil.

  1. Preparation: 30 minutes
  2. Rest: 2 hours
  3. Cooking: 10 minutes
  4. Total: 2 hours and 40 minutes
Suggested presentation:
  1. Serve the square croquettes with a fresh salad or sautéed cherry tomatoes, as shown in the pictures. They are perfect for sharing as an appetizer.
Additional advice:
  1. For an extra touch of flavour, you can add a little grated Parmesan cheese to the béchamel sauce.
  2. If you prefer a lighter version, you can bake the croquettes at 200°C for 15-20 minutes instead of frying them.
