Spring rolls.

Spring rolls are a classic Asian dish, crispy on the outside and full of flavour on the inside. Ideal as an appetizer or side dish, these spring rolls are simple to prepare and allow you to enjoy a delicious mix of textures and flavours in every bite.

Ingredients:

  • 200 g minced pork, chicken or a mixture of the two (optional)
  • 1 large carrot, grated
  • 100 g cabbage, finely chopped
  • 50 g bean sprouts
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 packet of filo pastry or spring roll dough sheets
  • Frying oil
  • Sweet and sour sauce or sweet and sour sauce of your choice to go with it

Elaboration:

  1. Start by heating a large frying pan over medium-high heat with a little oil. If you decide to include meat in the recipe, add the minced meat to the pan and cook until well browned and cooked through. Add the onion, garlic and grated ginger, and stir-fry until the onion is soft and fragrant.
  2. Add the grated carrot, chopped cabbage and bean sprouts to the pan. Cook for a few minutes until the vegetables are tender but still crisp. Stir in the soy sauce and sesame oil, mixing well to infuse all the ingredients with flavour. Remove the pan from the heat and allow the mixture to cool slightly before handling.
  3. While the mixture is cooling, prepare the spring roll dough sheets. Place a sheet on a clean surface and place a generous spoonful of the mixture on one end. Fold the sides inwards and then roll up tightly from the end with the filling to the other end, making sure it is well sealed. You can moisten the edges of the dough with a little water to make it stick better.
  4. Heat oil in a deep frying pan or deep fryer over medium-high heat. Fry the rolls in batches, making sure not to overcrowd the pan. Cook until golden brown and crispy on all sides. Once done, remove and place on paper towels to remove excess oil.
  1. Advice:
    • If you prefer a lighter option, you can bake the rolls instead of frying them. Simply place them on a baking tray lined with baking paper, brush them lightly with oil, and bake them at 200°C for 15-20 minutes or until golden brown and crispy.
    • You can also experiment with the filling by adding other ingredients such as mushrooms, peppers or even shrimps.
