Spinach with ham and poached egg is a simple and healthy recipe that combines the salty flavour of the ham with the softness of the spinach and the creamy touch of the egg. A perfect dish for a light dinner or a delicious first course.

Ingredients (for 4 people):

  • 500 g fresh spinach
  • 100 g of serrano ham in small pieces
  • 4 eggs
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Vinegar (optional, for the poached egg)

Elaboration:

  1. Wash the spinach well and drain. Peel and slice the garlic.
  2. In a large frying pan, add a drizzle of olive oil and sauté the sliced garlic until golden brown. Add the ham and fry for a couple of minutes.
  3. Add the spinach to the pan and cook over medium heat until tender. Season with salt and pepper to taste and set aside hot.
