This baked sirloin steak with mustard sauce is an elegant and easy-to-prepare main dish, ideal for special occasions or family meals. The juicy meat combined with the intensity and creaminess of the mustard sauce will create an unforgettable culinary experience.

Ingredients (for 4 people):

  • 2 pork tenderloins (approximately 600 g in total)
  • 2 cloves garlicfinely chopped
  • 1 tablespoon of herbs Provençal
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • For the mustard sauce:
    • 200 ml cooking cream
    • 2 tablespoons old-fashioned mustard
    • 1 teaspoon honey (optional, to balance flavours)
    • Salt and pepper to taste

Elaboration:

  1. Preheat the oven to 180 °C. Season the tenderloins with salt and pepper and sprinkle with the Provencal herbs.
  2. In a large frying pan, heat the olive oil over medium-high heat and brown the tenderloins on all sides until well seared. Remove and place in an ovenproof dish with the bay leaves.
  3. Place the dish in the oven and cook for 20-25 minutes, depending on the desired doneness.
  4. Meanwhile, prepare the sauce. In the same frying pan where you browned the tenderloins, pour the cream and bring to a medium heat. Add the old-fashioned mustard and mix well.
  5. Add honey (if using) and adjust with salt and pepper to taste. Simmer for 5-7 minutes, stirring until the sauce thickens slightly.
  6. Remove the tenderloins from the oven and leave to rest for 5 minutes before slicing.
  7. Serve the sirloin slices covered with the mustard sauce and serve with the garnish of your choice.
Suggested presentation:
  • Present the sirloin slices on a large plate with a little extra sauce on top and garnish with fresh herbs such as parsley or thyme.
  • Serve with mashed potatoes, steamed vegetables or a fresh salad.
Additional advice:
  • If you want a more intense touch, you can replace the honey with a pinch of balsamic vinegar.
  • For a perfect finish, use a cooking thermometer: the internal temperature of the sirloin should reach 65 °C for an ideal pink point.
  • This recipe can also be prepared with beef sirloin or even chicken breast.
