Seafood zarzuela is a traditional Spanish dish, full of seafood flavour and perfect to enjoy with company. Here is a recipe for a delicious seafood zarzuela:
Ingredients (for 4 people):
- 500 g fresh mussels
- 300 g squid, cleaned, cut into slices
- 300 g peeled prawns
- 200 g fresh clams
- 2 fillets of white fish (e.g. hake), cut into chunks
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red pepper, diced
- 2 ripe tomatoes, peeled and chopped (or 200 g chopped tomato)
- 1 bay leaf
- 1 glass of white wine
- 500 ml fish stock
- 2 tablespoons olive oil
- Salt and pepper to taste
- Pinch of saffron threads (optional)
- Fresh chopped parsley for garnish
Elaboration:
- In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic and red pepper. Sauté for about 8-10 minutes, until the vegetables are tender.
- Stir in the chopped tomato and bay leaf, and cook for a further 10 minutes, stirring occasionally, until the tomato has reduced and has a thicker texture.
- Add the white wine and allow the alcohol to evaporate, about 2-3 minutes.
- Add the fish stock, saffron threads (if using), and bring to the boil.
- Add the pieces of white fish and the squid. Cook over medium heat for about 10 minutes.
- Add the mussels, clams and prawns, and cook for a further 5-7 minutes, until the mussels and clams open. Discard any that do not open.
- Adjust salt and pepper to taste.
- Serve the zarzuela piping hot in individual casseroles, garnished with fresh parsley.
