Ingredients:
- 1 fresh pork knuckle (1 kg approx.)
- 4 medium potatoes

Elaboration:
- Preheating the ovenPlace the oven at 180°C.
- Preparing the knuckleClean the pork knuckle, removing excess fat. Season with salt, pepper and paprika on all sides.
- Initial barbecueIn a baking dish, place the knuckle with a drizzle of olive oil. Add the whole garlic cloves and the sprig of rosemary. Add the white wine and the meat stock. Roast in the oven for 2 hours, basting the knuckle with its own juices every 30 minutes to prevent it from drying out.
- Cooking the potatoesPeel and cut the potatoes into large cubes. Fry them in plenty of hot oil until golden brown. Remove from the heat and place on absorbent paper to remove excess oil. Season with salt and a few leaves of fresh rosemary.
- Brown the knuckleIncrease the oven temperature to 200°C for the last 20 minutes of cooking so that the skin of the knuckle is nicely browned and crispy.
- RestOnce ready, remove the knuckle from the oven and leave to rest for a few minutes before slicing to allow the juices to settle.
