Rice with vegetables and sausages is a colourful and flavourful recipe, ideal for sharing at a family meal. With a combination of fresh vegetables and juicy sausages, it's a dish that's always comforting.
Ingredients (for 4 people):
- 300 g bomba rice
- 2 fresh sausages
- 1 red pepper
- 1 green pepper
- 1 onion
- 2 cloves garlic
- 1 carrot
- 100 g broccoli
- 100 g peas
- 1 ripe tomato
- 700 ml vegetable stock
- 1 teaspoon sweet paprika
- Extra virgin olive oil
- Salt to taste
- Pepper to taste
- Sprigs of rosemary and fresh thyme for garnish
- 1 handful of fresh parsley
Elaboration:
- Prepare the ingredients: Wash and chop the peppers, onion, carrot and tomato. Separate the broccoli into small florets. Peel and chop the garlic cloves. Cut the sausages into medium pieces.
- Sauté the vegetables: In a paella pan or large frying pan, add a little olive oil and sauté the onion, garlic and carrot over a medium heat for about 5 minutes. Add the peppers and cook for another 5 minutes until soft.
- Add the sausages and tomato: Add the chopped sausages and cook until they begin to brown. Add the grated tomato and cook until the water has evaporated and the sauce is concentrated.
- Add the rice and spices: Add the rice and stir to soak in the flavours of the sofrito. Sprinkle with the sweet paprika and mix well.
- Cook the rice: Pour in the hot stock and add the peas and broccoli florets. Season with salt and pepper to taste. Cook over a medium heat for 18-20 minutes, or until the rice is tender and the stock has been completely absorbed.
- Rest: Remove from the heat and allow the rice to stand, covered, for 5 minutes before serving.
- Serve: Garnish with rosemary sprigs, fresh thyme and parsley before serving.
