Here is a delicious and simple recipe for a tasty vegetable rice dish.
Ingredients:
- 1 1/2 cups of rice.
- 4 and 1/2 cups of water.
- 1 green pepper.
- 1 tomato.
- 1 leek.
- 1 Celery stalk.
- 2 Turnips.
- 1/4 of green beans.
- 1/4 of carrots.
- 1 jar of peas.
- 1 jar of artichokes.
- 3 or 4 bunches of cauliflower.
- Ground saffron/1 stock cube.
- Oil, a little more than for normal rice.
Elaboration:
- Fry the pepper and tomato in oil,
- then sauté the vegetables (except for the artichokes, peas and cauliflower, which are added when the rice is cooked).
- Then add the water and cook with the vegetables and the stock cube for half an hour.
- Add the tender vegetables, the rice and the saffron, and when it starts to cook, cover the pot and cook for just 8 minutes (in an express pot).
