Rice with vegetables.

Here is a delicious and simple recipe for a tasty vegetable rice dish.

Ingredients:

  • 1 1/2 cups of rice.
  • 4 and 1/2 cups of water.
  • 1 green pepper.
  • 1 tomato.
  • 1 leek.
  • 1 Celery stalk.
  • 2 Turnips.
  • 1/4 of green beans.
  • 1/4 of carrots.
  • 1 jar of peas.
  • 1 jar of artichokes.
  • 3 or 4 bunches of cauliflower.
  • Ground saffron/1 stock cube.
  • Oil, a little more than for normal rice.

Elaboration:

  • Fry the pepper and tomato in oil,
  • then sauté the vegetables (except for the artichokes, peas and cauliflower, which are added when the rice is cooked).
  • Then add the water and cook with the vegetables and the stock cube for half an hour.
  • Add the tender vegetables, the rice and the saffron, and when it starts to cook, cover the pot and cook for just 8 minutes (in an express pot).

And that's it, simple, enjoy!
