Looking for a comforting dish that brings together the most traditional flavours of Spanish cuisine? This rice with chicken thighs and chorizo is perfect for a meal with family or friends, full of intense flavours and easy to prepare.
Ingredients:
- 4 chicken thighs
- 200 g chorizo, cut into small pieces
- 1 cup rice
- 2 cups chicken stock
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 red pepper, diced
- 1 Italian pepper, diced
- 2 ripe tomatoes (400 g)
- 1 teaspoon sweet paprika
- 1/2 teaspoon ground cumin
- 1 tablespoon of chorizo pepper
- Salt and pepper to taste
- Olive oil
Instructions:
- In a large frying pan, heat a little olive oil over medium-high heat. Season the chicken thighs with salt and pepper and brown on both sides until golden brown.
- When the chicken is browned, add a chopped garlic and half an onion and fry for a few minutes, without burning.
- Add 2 cups of water and a pinch of salt and simmer over low heat until the chicken is tender but firm (about 10-15 minutes). Remove and set aside.
- In a paella pan (paella for the Valencians), add a little oil and fry the other garlic and the other half onion until the onion becomes transparent, being careful not to burn the garlic.
- Add the chopped peppers and fry for about 5 minutes, then add the crushed tomatoes and continue frying until the water in the tomatoes evaporates.
- Add the chorizo until it releases the fat and then add the rice and stir to mix well with the other ingredients, over high heat.
- Add the sweet paprika, cumin, a tablespoon of chorizo pepper, two cups of strained chicken stock, and place the chicken thighs in the paella pan.
- Bring to the boil, taste for seasoning and adjust if necessary, then reduce and simmer for about 20-25 minutes or until the rice is tender.
- Leave to stand for 5 minutes covered and serve hot.
Additional advice::
- Homemade stock: If you have time, use homemade chicken stock, which will add depth of flavour.
- Mild or spicy chorizo: Depending on your preference, you can opt for spicy chorizo for an extra kick of flavour.
- Rice technique: Stir the rice only at the beginning so that it absorbs the flavours well, and then let it cook without stirring, achieving a perfect texture.
