Ratatouille with garlic and fried eggs.

It is a simple but flavourful dish, ideal to enjoy any day. The combination of ratatouille, prepared with fresh vegetables and garlic, together with fried eggs with creamy yolks, is simply irresistible. If you add a slice of rustic bread You nail it!

Ingredients:

  • 1 large courgette
  • 1 green pepper
  • 1 onion
  • 2 cloves garlic
  • 2 ripe tomatoes
  • 150 g Serrano ham in cubes
  • 4 eggs
  • Extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Bread to accompany (optional)

Elaboration:

  1. Start by washing all the vegetables thoroughly. Cut the courgette into small pieces, the peppers into strips and the onion into fine julienne strips. Peel the tomatoes and dice them. The garlic should be finely sliced. In a large frying pan, add a good splash of olive oil and, when hot, add the sliced garlic. Sauté over a medium heat until golden but not burnt.
  2. Add the onion and pepper to the pan, season with a pinch of salt and cook until tender. Then add the courgette and continue cooking, stirring occasionally, until all the vegetables are well done and have released their natural juices. Add the tomatoes and cook until they reduce slightly and integrate with the rest of the ingredients.
  3. Then add the diced Serrano ham and mix well, leaving it to cook for a few more minutes so that the ham releases its flavour without losing its texture. Adjust salt and pepper to taste.
  4. In a separate pan, heat enough oil and fry the eggs. For a perfect, creamy yolk, make sure the oil is very hot before adding the eggs, and cook until the whites are firm but the yolks are still runny.
  5. Serve the ratatouille on a plate with the fried eggs. You can add a few slices of bread to dip in the egg yolk and enjoy this dish to the full.
  1. Advice:
    • If you prefer a smoother ratatouille, you can peel the peppers before cooking. This will give a more uniform texture to the dish.
    • Serrano ham provides a delicious salty flavour, but you can substitute it with chorizo or even cooked ham if you prefer a milder flavour.
    • For a spicy touch, you can add a chilli along with the garlic at the beginning of the preparation.
