Here's a healthy and delicious recipe for a quinoa and tomato salad with capers:
Ingredients:
- 1 cup quinoa
- 2 cups of water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup capers, drained
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped (optional)
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Cooking quinoa:
- Rinse the quinoa under cold water to remove the bitterness.
- In a medium saucepan, bring the 2 cups of water or vegetable stock to a boil.
- Add the quinoa, reduce the heat to low, cover and simmer for about 15 minutes or until the quinoa has absorbed all the liquid.
- Remove from the heat and leave to stand for 5 minutes, then fluff with a fork and leave to cool.
- Prepare the salad ingredients:
- While the quinoa is cooling, halve the cherry tomatoes, dice the cucumber and finely chop the red onion, parsley and mint (if using).
- Mix the salad:
- In a large bowl, combine the cooked and cooled quinoa, cherry tomatoes, cucumber, capers, red onion, parsley and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt and pepper until well blended.
- Salad dressing:
- Pour the dressing over the salad and mix well so that all the ingredients soak up the dressing.
- Adjust salt and pepper to taste.
- Serve:
- Serve the quinoa and tomato salad with capers cold or at room temperature.
