Here's a healthy and delicious recipe for a quinoa and tomato salad with capers:

Ingredients:

  • 1 cup quinoa
  • 2 cups of water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup capers, drained
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped (optional)
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Cooking quinoa:
    • Rinse the quinoa under cold water to remove the bitterness.
    • In a medium saucepan, bring the 2 cups of water or vegetable stock to a boil.
    • Add the quinoa, reduce the heat to low, cover and simmer for about 15 minutes or until the quinoa has absorbed all the liquid.
    • Remove from the heat and leave to stand for 5 minutes, then fluff with a fork and leave to cool.
  2. Prepare the salad ingredients:
    • While the quinoa is cooling, halve the cherry tomatoes, dice the cucumber and finely chop the red onion, parsley and mint (if using).
  3. Mix the salad:
    • In a large bowl, combine the cooked and cooled quinoa, cherry tomatoes, cucumber, capers, red onion, parsley and mint.
    • In a small bowl, whisk together the olive oil, lemon juice, salt and pepper until well blended.
  4. Salad dressing:
    • Pour the dressing over the salad and mix well so that all the ingredients soak up the dressing.
    • Adjust salt and pepper to taste.
  5. Serve:
    • Serve the quinoa and tomato salad with capers cold or at room temperature.
