Quick bread.

This quick bread is ideal for those days when we don't have much time, but want to enjoy a delicious homemade bread. With a soft texture on the inside and a crispy crust on the outside, this bread is sure to be a hit on your table.

Ingredients (for 1 loaf):

  • 500 g of strong flour
  • 325 ml lukewarm water
  • 10 g salt
  • 5 g sugar
  • 15 g fresh yeast (or 5 g dried yeast)
  • 2 tablespoons of extra virgin olive oil

Traditional production:

  1. Dissolve the yeast in the warm water and add the sugar.
  2. In a large bowl, mix the flour and salt. Make a well in the centre and add the yeast and water mixture.
  3. Add the olive oil and mix well until a dough forms.
  4. Knead for 10 minutes on a floured surface until the dough is smooth and elastic.
  5. Form the dough into a ball and place it in a lightly greased (oven-proof) bowl or mould.
  6. Turn on the oven to 220 °C. and while the oven is still cold, put the dough in the indicated container, make a few cuts on the top and sprinkle with a little flour.
  7. Bake for 40 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  8. Leave to cool on a wire rack before slicing.

Preparation with Thermomix:

  1. Add the water and the crumbled yeast to the Thermomix mixing bowl. Blend for 2 minutes, 37 °C, speed 2.
  2. Add the flour, salt, sugar and olive oil. Mix for 30 seconds on speed 6.
  3. Knead for 3 minutes on pin speed.
  4. Turn the oven on at 220 °C. Place the dough on a baking tray, cut a few slits in the top and sprinkle with flour.
  5. Bake for 40 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  6. Leave to cool on a wire rack before slicing.
Suggested presentation:
  • Serves this bread It can be served quickly with a good olive oil for dipping or with your favourite butter. It is also perfect with stews or soups.

  • 45 minutes.
Additional advice:
  • If you want a deeper flavour, you can add dried herbs such as rosemary or thyme to the dough.
  • For a crispier crust, place a bowl of water in the bottom of the oven while the bread bakes.
