Prawn salad

Ingredients:

  • 300 g peeled prawns
  • 200 g lettuce mix (iceberg lettuce, rocket, spinach, etc.)
  • 1 large tomato, sliced
  • 1 cucumber, thinly sliced
  • 1 red onion, cut into julienne strips
  • 2 tablespoons of extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions:

  1. In a large frying pan, heat the olive oil over medium heat.
  2. Add the peeled prawns to the pan and sauté for about 3-4 minutes, stirring occasionally, until pink and cooked through. Remove from the heat and set aside.
  3. In a large bowl, place lettuce mixture, tomato slices, cucumber slices and julienned red onion.
  4. Add the sautéed prawns to the salad.
  5. Squeeze the lemon juice over the salad and then drizzle with a little extra virgin olive oil. Season with salt and pepper to taste and toss gently to combine all the ingredients.
  6. Serve the salad on individual plates and sprinkle with chopped fresh parsley for garnish.
