Ingredients:
- 300 g peeled prawns
- 200 g lettuce mix (iceberg lettuce, rocket, spinach, etc.)
- 1 large tomato, sliced
- 1 cucumber, thinly sliced
- 1 red onion, cut into julienne strips
- 2 tablespoons of extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions:
- In a large frying pan, heat the olive oil over medium heat.
- Add the peeled prawns to the pan and sauté for about 3-4 minutes, stirring occasionally, until pink and cooked through. Remove from the heat and set aside.
- In a large bowl, place lettuce mixture, tomato slices, cucumber slices and julienned red onion.
- Add the sautéed prawns to the salad.
- Squeeze the lemon juice over the salad and then drizzle with a little extra virgin olive oil. Season with salt and pepper to taste and toss gently to combine all the ingredients.
- Serve the salad on individual plates and sprinkle with chopped fresh parsley for garnish.
