Potatoes with ribs.

This potato and ribs dish is a traditional stew full of flavour, ideal for comforting on cooler days. The combination of the tender meat and the potatoes absorbing the flavour of the broth make it a real delicacy.

Ingredients:

  • 600 g pork ribs, cut into pieces
  • 4 medium potatoes
  • 1 onion
  • 2 cloves garlic
  • 1 bay leaf
  • 1 teaspoon sweet paprika
  • 1 litre of meat stock or water
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 2 boiled eggs for garnish (optional)
  • Chopped parsley (optional)

Elaboration:

  • Step 1: Brown the ribs
    • Brown the ribsIn a large pan, add a drizzle of olive oil and heat over medium heat. Add the pork ribs and brown on all sides for about 10 minutes until golden brown. Remove and set aside.
  • Step 2: Prepare the sofrito
    • Vegetable stir-fryIn the same pan, add the finely chopped onion and garlic cloves. Sauté over a medium heat until golden brown and well poached.
    • Add the paprikaAdd the sweet paprika and mix well with the vegetables, taking care not to let it burn to avoid bitterness.
  • Step 3: Add the rest of the ingredients
    • Add the ribs and potatoesPeel the potatoes and cut them into chunks so that they release starch and thicken the broth. Add them to the casserole along with the browned ribs.
    • Broth and bay leavesAdd the bay leaf and cover with the meat stock or water until everything is well submerged. Season to taste with salt and pepper.
  • Step 4: Cooking the stew
    • Cook over medium heatCook the stew for about 30-40 minutes over medium heat, stirring occasionally and checking that the potatoes are tender. If necessary, add more stock or water.
  • Step 5: Decorate and serve
    • Boiled eggsOnce the stew is ready, garnish with chopped boiled eggs and parsley if desired. Serve piping hot.

  • For a different touch, add a pinch of hot paprika along with the sweet paprika.
  • If you want the broth to thicken a little, just mash some potatoes and the broth will immediately "fatten up".
