This potato stew with prawns is a tasty and comforting dish, perfect for enjoying the flavours of the sea with the softness of the potatoes. Ideal for any time of the year.
Ingredients:
- 500 g raw prawns
- 800 g potatoes
- 1 large onion
- 2 cloves garlic
- 1 green pepper
- 1 ripe tomato
- 1 bay leaf
- 1 teaspoon sweet paprika
- 100 ml white wine
- 1 litre of fish stock or water
- Extra virgin olive oil
- Salt and pepper to taste
Elaboration:
- Prepare the brothPeel the prawns and separate the bodies and the rest and in a large pan, add a splash of olive oil and fry the shells and heads. Add a little salt and when they are toasted, add the water and boil for 5 minutes. Remove from the heat and strain. Set aside.
- Prepare the sofritoIn a large pan, add a drizzle of olive oil and sauté the onion, garlic and green pepper, finely chopped. Cook over medium heat until tender.
- Add the tomato and paprikaGrate the ripe tomato and add it to the pan along with the teaspoon of paprika. Cook for a few minutes until the tomato is well integrated.
- Add the potatoesPeel the potatoes, cut them into irregular pieces (mashing them to release more starch) and add them to the stir-fry. Stir well so that the potatoes soak up the flavours.
- Add the wine and stockPour the white wine over the potatoes and allow the alcohol to evaporate for a couple of minutes. Then add the stock from the heads and shells of the prawns, strained, the bay leaf, salt and pepper to taste. Cook over a medium heat until the potatoes are tender, about 20-25 minutes.
- Add the prawnsAdd them to the stew in the last 5 minutes of cooking, so that they are cooked right at the end and are not dry.
- RestTurn off the heat and let the stew stand for a few minutes before serving, so that the flavours integrate better.

- Serve the stew in individual earthenware casseroles to keep it warm and accompany it with a nice piece of bread to dip in the sauce.

- To intensify the flavour, you can make a quick fumet with the heads and shells of the prawns.
