Ingredients (for 4 people):

  • 4 pieces of veal osso buco (approx. 300 g each)
  • 2 medium onions
  • 3 carrots
  • 2 cloves garlic
  • 150 ml dry white wine
  • 500 ml meat stock
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Flour to flour the meat
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Mashed potatoes or rice to go with it

Elaboration:

  1. Prepare the ingredients: Peel and chop the onions, carrots and garlic cloves. Season the osso buco pieces with salt and pepper and lightly flour them.
  2. Brown the meat: In a large pan, heat a little olive oil over medium-high heat. Brown the osso buco pieces on both sides until well seared. Remove and set aside.
  3. Sauté the vegetables: In the same pan, add a little more oil if necessary and fry the onion, carrots and garlic for about 5 minutes, until tender.
  4. Deglaze and cook: Pour the white wine into the pan to deglaze, scraping the bottom to release any adhering juices. Allow to reduce for 2-3 minutes and then add the beef stock, thyme and bay leaves.
  5. Simmering: Add the osso buco pieces to the pan and cover. Simmer for about 2 hours, or until the meat is very tender and falls off the bone easily.
  6. Serve: Remove the bay leaves and serve the osso buco with the resulting sauce, accompanied by mashed potatoes or rice.

  • This dish is best served hot, accompanied by soft mashed potatoes or white rice to soak up all the delicious sauce. Garnish with some chopped fresh parsley for a touch of colour.
