These mussels with vegetable vinaigrette are a fresh and colourful appetizer, perfect for sharing at family gatherings or with friends. The combination of flavours from the sea and the crunchy vegetable vinaigrette adds a special and refreshing touch.

Ingredients (for 4 people):

  • 1 kg fresh mussels
  • 1 small red pepper
  • 1 small green pepper
  • 1 small yellow pepper
  • 1 small onion
  • 1 tomato (optional)
  • 2 tablespoons white wine vinegar
  • 3 tablespoons of extra virgin olive oil
  • Salt to taste
  • chopped fresh parsley (for garnish)

Elaboration:

  1. Cooking the musselsWash the mussels well under cold water, removing impurities and beards. Place the mussels in a pan with a little water and cover. Cook over medium-high heat until they open (about 5-7 minutes). Remove from the heat, leave to cool, and discard the mussels so that they do not open.

  3. DressingIn a bowl, mix the chopped vegetables. Add the vinegar, olive oil and a pinch of salt. Stir well so that all the vegetables are well impregnated with the dressing.
  4. AssemblyPlace the open mussels in a serving dish and place a spoonful of the vegetable vinaigrette on each one.
  5. DecorationSprinkle fresh chopped parsley on top for a touch of colour and freshness.
