Delight yourself with fresh mussels in a rich spicy tomato sauce, cooked with a touch of white wine. An explosion of flavour ideal with crusty bread.
Ingredients:
- 1 kg fresh mussels
- 2 or 3 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 chilli or hot chilli (you can adjust to taste)
- 200 g crushed tomatoes (you can use fresh peeled or canned tomatoes)
- 100 ml white wine
- Salt and pepper to taste
- Crusty bread to accompany (optional)
Elaboration:
1. Clean the mussels:
- Clean the mussels thoroughly, removing the beards and scraping the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.
2. Prepare the spicy tomato sauce:
- In a large saucepan, heat the olive oil over medium heat.
- Add the garlic first and when it starts to brown, add the onion and fry until transparent, about 5 minutes.
- Add the chilli or hot chilli. Cook together for a few more minutes, stirring occasionally.
3. Cook the tomatoes:
- Add the crushed tomatoes to the pan. Stir well to combine with the rest of the ingredients.
- Add the white wine and bring the mixture to the boil.
- Reduce the heat and let the sauce simmer for 15-20 minutes, stirring occasionally. If the sauce becomes too dry, you can add a little water or fish stock.
- Finally, blend the sauce to a smooth texture.
4. Cook the mussels:
- When the sauce is well cooked and the flavours are integrated, add the cleaned mussels to the pan.
- Cover with a lid and cook over medium heat for 5-7 minutes, or until all the mussels have opened. Discard any mussels that do not open.
5. Serve:
- Remove one of the two shells from the mussels for presentation.
- Taste the sauce and adjust the seasoning with salt and pepper if necessary.
- Serve the mussels in deep plates, pouring the spicy tomato sauce over the mussels.
- If you like, you can garnish with chopped fresh parsley and serve with crusty bread to dip in the sauce.
Advice:
- Serve with a nice chilled white wine to enhance the flavours of the dish, and don't forget to have plenty of crusty bread on hand to make the most of every drop of the delicious sauce!
