Murcian salad.

Murcian salad, also known as mojete murciano, is a fresh and tasty dish typical of the region of Murcia, in southeastern Spain. It is characterised by its simplicity and the combination of ingredients from the Murcian garden, such as tomatoes, onions, tuna, hard-boiled eggs and black olives. It is an ideal dish to enjoy in summer or as a light starter at any time of the year. In terms of ingredients, it is very similar to the antequera truncheon or even to the cordovan salmorejoall of them recipes that can be found in this Blue Notebook.

Ingredients:

  • 4 large ripe tomatoes (or 1 can of peeled tomatoes)
  • 1 sweet onion (optional)
  • 2 hard-boiled eggs
  • 200 g tuna in olive oil
  • 100 g black olives
  • 1 roasted red pepper (can be canned)
  • Extra virgin olive oil
  • Salt to taste
  • Vinegar to taste

Instructions:

1. Prepare the ingredients:
  • If using fresh tomatoes, peel and cut into medium-sized pieces. If using canned tomatoes, simply drain and cut into chunks.
  • Chop the sweet onion into small pieces (optional).
  • Roast the red pepper if not already roasted, peel and cut into strips.
  • Cook the eggs for 10 minutes in boiling water. Then cool in cold water, peel and cut into quarters.
2. Mix the salad:
  • In a large bowl, place the chopped tomatoes.
  • Add the chopped onion (if using), roasted pepper strips, flaked tuna and black olives.
  • Add the chopped hard-boiled eggs.
3. Dressing:
  • Drizzle the salad generously with extra virgin olive oil.
  • Add salt to taste and a little vinegar (adjust according to preference).
4. Mix and serve:
  • Mix all the ingredients well so that they are impregnated with the dressing.
  • Let the salad stand in the refrigerator for at least 30 minutes before serving to allow the flavours to integrate well.
Advice:
  • Tomatoes: If you use fresh tomatoes, it is best to choose the ripest ones for a sweeter and juicier taste.
  • Tuna: Use a good tuna in olive oil to give the salad a better taste.
  • Customisation: You can add other ingredients such as capers, cucumber or even some chopped garlic to give it a different touch.
