This minced meat roll with ham and cheese accompanied by a rich vegetable sauce is an ideal recipe for special occasions or for a family meal. Juicy, tasty and with a presentation that impresses, it is a dish that combines the best of meat and vegetables.
Ingredients (for 6 people):
- For the roll:
- 500 g of minced veal
- 500 g of minced pork
- 100 g of sliced Serrano ham
- 100 g sliced cheese (cheddar or gouda type)
- 1 egg
- 50 g of breadcrumbs
- 1 clove garlic, minced
- 1 teaspoon of chopped fresh parsley
- 1 teaspoon of salt
- Ground black pepper to taste
- 150 g sliced bacon (for wrapping the roll)
- For the vegetable sauce:
- 2 carrots
- 1 large onion
- 1 green pepper
- 2 ripe tomatoes
- 200 ml of meat stock
- 50 ml of white wine
- 30 ml of extra virgin olive oil
- Salt and pepper to taste
Elaboration:
- In a large bowl, mix the minced meats with the egg, breadcrumbs, minced garlic, parsley, salt and pepper until all the ingredients are well integrated.
- Spread the mixture on baking paper, forming a rectangle about 1.5 cm thick.
- Place the serrano ham and cheese slices on top of the meat, leaving a margin around the edges to prevent the stuffing from spilling out.
- Roll up the meat using the baking paper to form a compact cylinder. Wrap the roll with the bacon slices, making sure to cover the entire surface.
- Preheat the oven to 180 °C. Place the roll on a baking tray and bake for 45 minutes.
- Meanwhile, prepare the sauce. Peel and cut the carrots, onion, pepper and tomatoes into small pieces.
- Heat the olive oil in a large frying pan and sauté the vegetables for 10 minutes. Add the white wine and cook for a further 5 minutes.
- Add the beef stock, salt and pepper. Cook over medium heat for 20 minutes, then blend the mixture to a smooth sauce.
- Once the roll is ready, remove from the oven and cut into slices. Serve with the hot vegetable sauce on top.
Additional advice:
- If you want a juicier touch, you can add a little cream to the sauce before mashing it.
- For a more intense flavour, use Iberian ham and cured cheese in the filling.
- If you prefer a lighter option, replace the bacon with blanched cabbage leaves.
