Ingredients:

  • 1 ripe cantaloupe melon
  • 1/2 cucumber
  • 1 Italian green pepper
  • 1 small garlic clove
  • 1/2 small onion (optional)
  • 1 slice of sliced bread from the day before
  • 30 ml extra virgin olive oil
  • 1 tablespoon of sherry vinegar
  • Salt to taste

Elaboration:

  • Peel and chop the melon, cucumber, green pepper and onion (if using). Remove the seeds from the melon and pepper.
  • Soak the slice of bread in a little water for a few minutes. Drain the excess water well.
  • Place all the ingredients in the bowl of a blender. Add salt and pepper to taste.
  • Blend everything until you obtain a fine, homogeneous cream.
  • Taste and adjust the flavour if necessary. You can add more salt, vinegar or olive oil according to your preference.
  • Strain the gazpacho if you want a finer texture.
  • Refrigerate the gazpacho for at least 30 minutes before serving.
  • Serve the gazpacho in chilled shots. You can decorate them with some fresh mint leaves or a piece of melon.

Advice:

  • You can use any type of melon, but cantaloupe is the most recommended for its sweet taste and juicy texture.
  • If you want a more intense gazpacho, you can add some tomato or red pepper.
  • You can also add other vegetables of your choice, such as courgettes or carrots.
  • If you don't have day-old sliced bread, you can use crackers or toast.
  • For a special touch, you can add some serrano ham or cubed fresh cheese to the shots.
