Ingredients (for 4 people):
- 800 g lamb pieces
- 1 large onion, chopped

Elaboration:
- In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrots and celery and sauté for about 5-7 minutes until tender.
- Add the lamb to the pan and cook for 5-10 minutes until the meat is browned on all sides.
- Add the ras el hanout, cumin, turmeric, ginger and cinnamon. Stir well to coat the meat with the spices. Cook for a couple more minutes to lightly toast the spices.
- Pour the stock over the mixture and add salt and pepper to taste. Bring to the boil, reduce the heat and simmer for 1 hour, or until the lamb is tender.
- Meanwhile, prepare the couscous according to the instructions on the packet. Add the sultanas and butter to the cooked couscous and stir well.
- Serve the lamb with the couscous, garnished with rosemary leaves or fresh mint.
