Homemade custard.

Custard is a traditional, creamy dessert that has been present in home baking for generations. Their smooth texture and delicate vanilla flavour make them an irresistible classic. Ideal for the whole family, they can be served with biscuits or sprinkled with cinnamon to enhance their flavour.

Ingredients (for 4 persons):

  • 500 ml whole milk
  • 4 egg yolks
  • 100 g sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon cornstarch (optional, for added thickness)
  • 1 cinnamon stick
  • The peel of half a lemon (without the white part)
  • 4 Maria biscuits
  • Cinnamon powder for decoration

Elaboration:

  1. Infuse the milk: In a saucepan, heat the milk together with the cinnamon stick and lemon peel. Bring to a boil over medium heat. Remove from the heat and leave to infuse for a few minutes. Then strain the milk to remove the cinnamon and lemon.
  2. Prepare the egg yolk mixture: In a bowl, beat the egg yolks with the sugar until creamy. Add the cornflour dissolved in a tablespoon of cold milk and mix well to avoid lumps.
  3. Cook the custard: Gradually pour the hot milk over the egg yolk mixture, stirring constantly. Then return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens and has a smooth texture. It should not boil to prevent it from splitting.
  4. Divide into containers: Remove from the heat and distribute the custard into individual bowls. Place a biscuit in each bowl and leave to warm.
  5. Cool and serve: Refrigerate the custard for at least 2 hours before serving. Before enjoying, sprinkle with ground cinnamon to taste.
Suggested presentation:
  • Serve with a classic Maria biscuit or any crunchy biscuit.
  • Serve in individual glasses with a dollop of whipped cream for extra creaminess.
  • For a more aromatic version, try adding a little orange zest to the infused milk.
