Ingredients (for 8 people):
- 4 Granny Smith apples, peeled and cored.
- 200 g sugar
- 3 eggs L
- 200 g mild olive oil
- 250 g pastry flour

- Icing sugar for sprinkling

Elaboration:
- Peel and mash 2 of the Granny Smith apples. Slice the other 2 into thin slices to decorate the top of the cake. Set aside separately.
- In a large bowl, beat the eggs with the sugar until the mixture whitens and increases in volume. This will take a few minutes and is important for a fluffy cake.
- Add the olive oil a little at a time while continuing to whisk, making sure it is well integrated.
- In another bowl, sift together the flour, baking powder, cinnamon and pinch of salt. Then add them to the wet mixture and mix with a stirring motion until you obtain a homogeneous dough.
- Add the 2 crushed apples to the batter and mix gently.
- Preheat the oven to 180°C. Pour the mixture into a greased baking tin and arrange the reserved apple slices on top, decorating as desired. Bake for about 40 minutes or until a toothpick inserted comes out clean.
- Leave the cake to cool on a wire rack and, once cool, sprinkle icing sugar on top. You can decorate it with fresh fruit for an extra touch.
