Garlic prawns are a classic of Spanish cuisine, perfect for a tapa or a delicious starter. With just a few ingredients you get a dish full of flavour, ideal to enjoy with crusty bread.
Ingredients (for 4 people):
- 500 g peeled prawns (you can use fresh or frozen prawns)
- 4 cloves of garlic
- 1 dried chilli (optional)
- 100 ml extra virgin olive oil
- Salt to taste
- chopped fresh parsley (for garnish)
Traditional production:
- If you use frozen prawns, defrost them beforehand by soaking them in cold water for 15-20 minutes. Then drain well and pat dry with kitchen paper to remove excess water.
- Peel the garlic cloves and cut them into thin slices.
- In a large frying pan, heat the olive oil over medium heat. Add the sliced garlic and chilli (if using) and fry for 2-3 minutes, or until the garlic is golden but not burnt.
- Add the peeled prawns to the pan and turn up the heat. Cook the prawns for 2-3 minutes, stirring occasionally, until they change colour and are done.
- Add salt to taste and remove the pan from the heat.
- Serve the garlic prawns in individual earthenware bowls or in a deep dish, garnished with a little chopped fresh parsley.
Suggested presentation:
- Serve the prawns with garlic piping hot, accompanied by crusty bread to dip in the delicious flavoured oil.
Additional advice:
- For extra flavour, you can add a splash of white wine just before adding the prawns.
- If you prefer a milder version, you can omit the chilli.
