Ingredients (for 4 people):
- 4 fresh eggs (can be 8, 2 per person if desired)
- 4 potatoes
- 150 g chorizo in slices or small pieces
- 50 ml of extra virgin olive oil
- 1 teaspoon of salt
- Water for cooking the potatoes
Elaboration:
- Peel the potatoes, cut them into medium-sized pieces and boil them in a pan with water and salt for 20 minutes or until tender.
- Drain the potatoes and mash them with a fork or potato masher. Add a drizzle of olive oil and blend until smooth. Set aside.
- In a frying pan, heat a little olive oil and fry the chorizo pieces over medium heat until golden brown. Remove and set aside.
