Fried baby squid.

Here is a simple and delicious recipe for fried baby squid:

Ingredients:

  • 500 g of fresh, clean and whole baby squid
  • wheat flour (you can use chickpea flour for a gluten-free option)
  • Extra virgin olive oil or sunflower oil for frying
  • Salt to taste
  • Lemon (optional, to serve)

Instructions:

  1. Prepare the baby squid:
    • Make sure the baby squid are very clean. If they are not, remove the head, the entrails, the transparent feather and the outer skin. Wash well under cold water and drain.
  2. Dry the baby squid:
    • Dry the baby squid well with kitchen paper. It is important that they are very dry so that the flour adheres better and does not splatter when frying.
  3. Dredge in flour:
    • Place the flour in a shallow dish or bowl.
    • Dredge the squid in the flour, making sure they are well coated. Shake off the excess flour.
  4. Heating the oil:
    • In a deep frying pan, heat plenty of oil over medium-high heat. The oil should be very hot (about 180°C) so that the squid fry quickly and crisp.
  5. Fry the baby squid:
    • Fry the baby squid in small batches so as not to lower the temperature of the oil. Cook for about 2-3 minutes or until golden brown and crispy.
    • Remove the squid with a slotted spoon and place them on absorbent paper to remove excess oil.
  6. Season and serve:
    • Season the fried squid with salt to taste.
    • Serve immediately with lemon slices on the side, if desired, to add a touch of freshness.
    • If you wish, you can accompany them with a tomato and onion salad, which is what I do.
