Empanadillas de Ropa Vieja.

Do you have leftover stew or stew? Turn them into a delicious appetizer with these ropa vieja pasties. A simple recipe, full of flavour and perfect for making the most of leftover stews - you won't leave a single one on the plate!

Ingredients (for 4 people):

  • For the filling:
    • 300 g ropa vieja (shredded leftovers from stew or stew)
    • 50 g finely chopped onion
    • 50 g chopped red pepper
    • 1 clove garlic, minced
    • 3 tablespoons tomato sauce
    • Extra virgin olive oil (for the sofrito)
    • Salt and pepper to taste
  • For the pasties:
    • 6 wafers of dough for pasties
    • Sunflower oil (for frying)
  • To accompany:
    • Green salad with cherry tomatoes

Elaboration:

  1. Prepare the filling:
    • In a frying pan, heat a drizzle of olive oil. Sauté the onion, garlic and red pepper until tender.
    • Add the shredded ropa vieja and tomato sauce. Cook for 5 minutes so that the flavours blend well.
    • Adjust salt and pepper. Remove from the heat and allow the filling to cool.
  2. Fill the pasties:
    • Place a small amount of the filling in the centre of each wafer.
    • Fold them in half and press the edges with a fork to seal them well.
  3. Fry the pasties:
    • Heat plenty of sunflower oil in a frying pan or deep fryer.
    • Fry the patties in batches until golden brown on both sides.
    • Remove and place on absorbent paper to remove excess oil.
  4. Serve:
    • Serve with a green salad and cherry tomatoes for a fresh touch.
Suggested presentation:
  • You can add a few slices of lemon to the dish for a citrusy touch.
  • You can also bake the pasties instead of frying them for a lighter option.
Additional advice:
  • If you prefer a juicier filling, add a little more tomato sauce.
  • These pasties can also be filled with other leftover stews or meats that you have available.
