Donostiarra soup is a classic Basque dish, full of flavour and perfect to enjoy on cold days. With ingredients from the sea and a homemade touch, this recipe will transport you to the northern coast of Spain.
Ingredients (for 6-8 people):
- 400 g white fish (hake, monkfish or similar)
- 200 g shrimps or prawns
- 1 large onion
- 1 green pepper
- 2 cloves garlic
- 2 ripe tomatoes
- 1 leek
- 1 carrot
- 1 bay leaf
- 1 litre fish stock
- 2 eggs
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Pickled green chillies (optional, to accompany)
Elaboration:
- Prepare the sofrito: Peel and finely chop the onion, green pepper, leek, carrot and garlic. In a large pan, add a splash of olive oil and sauté the onion, leek, garlic and carrot over a medium heat until soft and golden. Then add the green pepper and cook for another 5 minutes.
- Add the tomato and fish: Grate the tomatoes and add them to the sofrito. Cook until the tomato has reduced and the mixture is thick. Add the cleaned and boned fish, cut into medium-sized pieces, and stir to combine with the sofrito.
- Add the stock and cook: Pour the fish stock into the pan and add the bay leaf. Cook over a medium heat for about 20 minutes, or until the fish is cooked through and the flavours have integrated.
- Add the prawns and eggs: Peel the prawns and add them to the pan. Cook for a further 5 minutes. Meanwhile, beat the eggs and slowly pour them into the soup, stirring so that they integrate and form threads in the broth.
- Adjust seasoning: Add salt and pepper to taste. Remove the bay leaf before serving.
Additional advice:
- You can use leftover fish and seafood to prepare the broth, which will enhance the flavour of the soup even more.
- Add a few slices of toasted bread to give a crunchy touch to the dish.
