Leek and Pear Cream with Ham.

The Cream of leek and pear soup with ham is a delicious combination of mild, sweet flavours with the salty touch of ham. Ideal as a light starter or a comforting dinner, this recipe stands out for its simplicity and elegance.

Ingredients (for 4 people):

  • 3 medium leeks (white part only).
  • 2 ripe pears (conference type or similar).
  • 1 medium potato.
  • 700 ml vegetable or chicken stock.
  • 100 ml of liquid cream (optional).
  • 2 tablespoons of extra virgin olive oil.
  • Salt to taste.
  • White pepper to taste.
  • 100 g of serrano ham in thin strips.

Elaboration (traditional):

  1. Wash and cut the leeks into thin slices. Peel the pears and potato and cut into small pieces.
  2. In a saucepan, heat the olive oil over medium heat. Sauté the leeks until tender, but do not brown.
  3. Add the potato and pears to the leek stir-fry. Stir for 2-3 minutes to integrate the flavours.
  4. Add the vegetable or chicken stock and bring to the boil. Reduce the heat, cover and cook for 20 minutes or until the vegetables are tender.
  5. Remove the pan from the heat and allow to cool slightly before blending with a hand or glass blender until smooth.
  6. If you want a creamier texture, add the cream and mix well. Adjust the salt and pepper.
  7. Serve the hot cream in bowls or bowls.
  8. Before garnishing, lightly toast the serrano ham strips in a hot frying pan to enhance their flavour and crispness. Then spread them over the cream before serving.

Elaboration (Thermomix):

  1. Place the leeks in the Thermomix and chop for 5 seconds on speed 5.
  2. Add the olive oil and fry for 7 minutes, 100 °C, speed 1.
  3. Add the pears, potato and stock. Cook for 20 minutes, 100 °C, speed 1.
  4. Lower the temperature for a few minutes and blend for 1 minute on speed 5-10.
  5. Add the cream if desired and mix for 30 seconds on speed 3. Adjust the salt and pepper.
  6. Serve hot and garnish with the ham strips (lightly toasted).
Suggested presentation:
  • Add a drizzle of extra virgin olive oil just before serving.
  • Accompany with crunchy croutons or toasted bread to give texture.
