This carrot cream is a simple, delicious recipe that is perfect for any time of the year. The touch of thyme and grated cheese adds a unique flavour that enhances the natural sweetness of the carrots.
Ingredients (for 4 people):
- 500 g carrots
- 1 medium potato
- 1 onion
- 2 cloves garlic
- 800 ml vegetable stock
- 100 ml cooking cream
- 2 tablespoons of extra virgin olive oil
- Dried thyme to taste
- Grated Parmesan cheese (to serve)
- Salt and pepper to taste
Elaboration:
- Peel the carrots, potato, onion and garlic cloves. Cut the carrots and potato into medium pieces, and the onion into julienne strips.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes or until the onion is translucent.
- Add the carrots and potato to the pan. Stir well and cook for 3-4 minutes to allow the vegetables to soak up the flavour of the sofrito.
- Pour the vegetable stock into the pot and bring to the boil.
- Once it starts to boil, reduce the heat and simmer for about 20 minutes or until the carrots and potato are tender.
- Blend the mixture with a hand blender until smooth and homogeneous. If you prefer a finer texture, you can strain the cream through a sieve.
- Add the cooking cream and mix well.
- Adjust salt and pepper to taste.
- Serve the hot cream in bowls.
- Sprinkle with dried thyme and grated Parmesan cheese on top before serving.

- Serve the cream in individual bowls, garnished with some fresh thyme and a drizzle of extra virgin olive oil.
- Accompanies with bread toasted for a crispy contrast.
