Carrot Cream with Thyme and Grated Cheese.

This carrot cream is a simple, delicious recipe that is perfect for any time of the year. The touch of thyme and grated cheese adds a unique flavour that enhances the natural sweetness of the carrots.

Ingredients (for 4 people):

  • 500 g carrots
  • 1 medium potato
  • 1 onion
  • 2 cloves garlic
  • 800 ml vegetable stock
  • 100 ml cooking cream
  • 2 tablespoons of extra virgin olive oil
  • Dried thyme to taste
  • Grated Parmesan cheese (to serve)
  • Salt and pepper to taste

Elaboration:

  1. Peel the carrots, potato, onion and garlic cloves. Cut the carrots and potato into medium pieces, and the onion into julienne strips.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes or until the onion is translucent.
  3. Add the carrots and potato to the pan. Stir well and cook for 3-4 minutes to allow the vegetables to soak up the flavour of the sofrito.
  4. Pour the vegetable stock into the pot and bring to the boil.
  5. Once it starts to boil, reduce the heat and simmer for about 20 minutes or until the carrots and potato are tender.
  6. Blend the mixture with a hand blender until smooth and homogeneous. If you prefer a finer texture, you can strain the cream through a sieve.
  7. Add the cooking cream and mix well.
  8. Adjust salt and pepper to taste.
  9. Serve the hot cream in bowls.
  10. Sprinkle with dried thyme and grated Parmesan cheese on top before serving.
Suggested presentation:
  • Serve the cream in individual bowls, garnished with some fresh thyme and a drizzle of extra virgin olive oil.
  • Accompanies with bread toasted for a crispy contrast.
