Ingredients:
- 2 medium courgettes
- 1 large egg
- 1/2 cup flour (can be wheat flour or almond flour for a gluten-free option)
- 1/4 cup grated Parmesan cheese or grated semi-cured Manchego cheese (optional)
- 2 cloves garlic, minced
- 1/4 finely chopped onion (optional)
- Salt and pepper to taste
- Olive oil for frying
Elaboration:
- Prepare the courgette:
- Wash the courgettes well and grate them on a coarse grater.
- Place the grated courgette in a colander and sprinkle with a little salt. Leave to stand for about 10-15 minutes to release excess water.
- Next, squeeze the grated courgette well using a clean cloth or kitchen paper to remove as much water as possible.
- Mix the ingredients:
- In a large bowl, mix together the drained courgette, egg, flour, cheese, chopped garlic and onion (if using).
