Cod meatballs are a delicious and versatile dish that you can enjoy as an appetizer, starter or main course. Here is a basic recipe for cod meatballs:

Ingredients:

  • 500 g desalted cod
  • 2 eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • Fresh chopped parsley
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Crumble the cod: Start by crumbling the desalted cod, making sure to remove any remaining skin and bones. Finely chop the crumbled cod and place in a large bowl.
  2. Prepare the mixture: Add the beaten eggs, chopped onion, chopped garlic, breadcrumbs and chopped fresh parsley to the bowl with the crumbled cod. Season the mixture with salt and pepper to taste.
  3. Mix well: Mix all the ingredients together until well combined. The mixture should be compact enough to form meatballs, but still moist.
  4. Form the meatballs: With lightly moistened hands, form meatballs to the desired size and place on a tray.
  5. Fry the meatballs: Heat enough olive oil in a large frying pan over medium-high heat. When the oil is hot, fry the meatballs in batches, making sure not to overcrowd the pan. Fry until golden brown on all sides, about 3-4 minutes per side.
  6. Drain off excess oil: Once the meatballs are browned and cooked inside, remove them from the pan and place them on kitchen paper to absorb the excess oil.
  7. Serve hot: Serve the cod meatballs hot, accompanied by a tomato sauce, aioli or any other sauce of your choice.
