Cod flan with garlic peppers.

This salted cod flan combines the mildness of fish with the intensity of garlic peppers. Ideal as a starter or main course, it surprises with its elegant presentation and balanced flavour, perfect for special occasions or to innovate in everyday cooking.

Ingredients (for 6 people):

  • For the flan:
    • 300 g of desalted cod (skin and bones removed).
    • 4 eggs.
    • 200 ml of liquid cooking cream.
    • 200 ml milk.
    • 1 small onion.
    • 1 clove of garlic.
    • 2 tablespoons of extra virgin olive oil.
    • Salt and pepper to taste.
  • For the garlic peppers:
    • 4 roasted red peppers (can be homemade or canned).
    • 2 cloves of garlic, sliced.
    • 3 tablespoons of extra virgin olive oil.
    • Salt to taste.
  • To accompany:
    • Sautéed broccoli or bimi (optional).

Elaboration (traditional):

  1. Preparation of the cod flan:
    • Preheat the oven to 180 °C with top and bottom heat.
    • In a frying pan, heat the olive oil and sauté the finely chopped onion and garlic until soft.
    • Add the shredded cod and cook for 5 minutes. Remove from the heat and leave to cool.
    • In a large bowl, beat the eggs with the cream and milk. Season to taste with salt and pepper.
    • Add the cod, onion and garlic mixture to the bowl with the eggs and mix well.
    • Pour the mixture into a greased rectangular or flan mould.
    • Place the mould in a baking tray with hot water to bake it in the oven. bain-marie.
    • Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
    • Remove from the oven, allow to cool and carefully unmould.
  2. Preparation of the garlic peppers:
    • Cut the roasted peppers into strips.
    • In a frying pan, heat the olive oil and add the sliced garlic. Cook over medium heat until golden brown.
    • Stir in the pepper strips, add salt to taste and fry for 5 minutes to integrate the flavours.
  3. Assembly of the plate:
    • Place the unmoulded cod flan in a large serving dish.
    • Cover the surface with the garlic peppers.
    • Garnish the sides with sautéed broccoli or bimi to add colour and texture to the dish.

Elaboration (Thermomix):

  1. Cod flan:
    • Preheat the oven to 180 °C with top and bottom heat.
    • Put the onion and garlic in the mixing bowl. Blend for 5 seconds/speed 5.
    • Add the olive oil and fry for 5 minutes/120 °C/speed 1.
    • Stir in the flaked cod and cook for 5 minutes/120°C/reverse rotation/spoon speed. Remove and set aside.
    • Without cleaning the mixing bowl, add the eggs, cream, milk, salt and pepper. Mix for 10 seconds/speed 4.
    • Add the reserved cod and mix for 5 seconds/speed 3.
    • Pour the mixture into a greased rectangular baking tin, place in a bain-marie in the oven and bake for 45-50 minutes.
  2. Garlic peppers:
    • Place the garlic in the mixing bowl and chop 3 seconds/speed 5.
    • Add the olive oil and fry for 5 minutes/120 °C/speed 1.
    • Stir in the chopped roasted peppers and cook for 5 minutes/120°C/reverse rotation/spoon speed.
  3. Assembly:
    • Follow the usual steps for assembling the dish.

  • Ripe pears provide a more intense and natural flavour; adjust the amount of pear to your preference.
  • For a finer finish, pass the cream through a sieve after mashing, although I like to feel the texture of the pear.
