Cod and mussel zarzuela is a traditional dish full of Mediterranean flavour, perfect for those looking for a seafood stew full of tradition and taste. Cod and mussels are combined in a rich and tasty sauce that will transport you straight to the coast.
Ingredients:
- 400 g cod, desalted and cut into chunks
- 300 g cleaned mussels
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red pepper, chopped
- 2 ripe tomatoes, peeled and chopped
- 1 bay leaf
- 1 glass of white wine
- 1 glass of fish stock
- 1 tablespoon chorizo pepper puree
- 100 ml extra virgin olive oil
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Elaboration:
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until golden brown and tender. This will take about 5 minutes.
- Stir in the chopped red pepper and tomatoes. Simmer for 10 minutes, stirring occasionally, until the tomatoes have broken down and the sofrito is well integrated.
- Add the bay leaf, white wine, chorizo pepper and fish stock. Bring the mixture to the boil, then reduce the heat and simmer for about 15 minutes to allow the flavours to blend well.
- In a frying pan, lightly fry the cod in a little oil until lightly browned, but not toasted.
- Add the cod pieces to the pan, dipping them well into the sauce. Simmer for a further 10 minutes, making sure the cod is cooked through but not broken up.
- Finally, add the cleaned mussels to the pan. Cover and cook for about 5 minutes, until the mussels open. Discard any that have not opened.
- Adjust the salt and pepper to taste. Let the zarzuela stand for a few minutes before serving, so that all the flavours settle.
- Advice:
- You can add a little saffron to the stir-fry to give an extra touch of flavour and colour to the sauce.
- If you like it spicy, add a chilli pepper to the stir-fry at the beginning.
- Accompany this dish with a good rustic bread to dip in the delicious sauce.
