Discover the deliciousness of clams a la marinera with this classic recipe! A flavourful dish, ideal for any special occasion, with fresh clams cooked in a delicious white wine, tomato and spice sauce - perfect for seafood lovers!
Ingredients:
- 1 kg fresh clams
- 1 medium onion
- 2 cloves garlic
- 1 green pepper
- 1 ripe tomato
- 1 bay leaf
- 1 glass of white wine
- 1 tablespoon flour
- 1 teaspoon sweet paprika
- Extra virgin olive oil
- Salt to taste
- Fresh chopped parsley
Elaboration:
1. Cleaning of the clams:
- Place the clams in a large bowl with cold water and a good amount of salt. Let them stand for at least 30 minutes to loosen the sand. Then rinse them well under cold running water.
2. Preparation of the base:
- Peel and finely chop the onion and garlic.
- Wash and cut the green pepper into small pieces.
- Peel the tomato and cut into small cubes.
3. Cooking the clams:
- In a large pan, heat a splash of extra virgin olive oil over medium heat.
- Add the onion and green pepper and fry until tender and the onion is transparent.
- Add the chopped garlic and bay leaf and fry for a couple of minutes more.
- Add the tomato and let it cook until it has broken down, forming a kind of sauce.
4. Thickening the sauce:
- Sprinkle the flour over the frying mixture and stir well so that it integrates and cooks for a minute, avoiding lumps.
- Add the sweet paprika and mix quickly so that it does not burn.
5. Add the wine:
- Pour in the white wine and turn up the heat so that the alcohol evaporates, stirring constantly.
- Allow the sauce to reduce slightly and thicken.
6. Cooking the clams:
- Add the drained clams to the pan. Cover and cook over medium heat until all the clams have opened. This usually takes about 5-7 minutes.
- Discard clams that do not open, as they may be in poor condition.
Completion:
- Season with salt if necessary and sprinkle with chopped fresh parsley before serving.
