Chocolate crown.

The chocolate crown is the ideal dessert for cocoa lovers, with an intense flavour and a spongy texture that will make you fall in love from the first bite.

Ingredients (for 8 people):

  • 200 g pastry flour
  • 200 g sugar
  • 150 g dark chocolate for desserts
  • 125 g butter
  • 100 ml milk
  • 4 eggs
  • 50 g cocoa powder
  • 1 sachet of baking powder (16 g)
  • 1 pinch of salt
  • 100 g chocolate chips (for decoration)
  • Chocolate glaze (optional)
  • 100 g walnuts (optional)
  • 50 g candied fruit (orange and peach) (optional)

Elaboration:

  1. Preheat the oven: Preheat the oven to 180°C and grease a cake tin with a little butter and flour to prevent the cake from sticking.
  2. Melt the chocolate and butter: In a bowl, melt the chocolate together with the butter in a bain-marie or in the microwave in short intervals, stirring to prevent it from burning. Once melted, allow to temper.
  3. Mix the wet ingredients: In another bowl, beat the eggs together with the sugar until creamy and whitish. Add the milk and melted chocolate, and mix until well blended.
  4. Sieve the dry ingredients: Sieve the flour, cocoa powder, baking powder and pinch of salt. Gradually add them to the wet mixture, whisking gently until smooth. If you want an extra touch, add the chopped walnuts and chopped candied fruit.
  5. Pour the mixture into the mould: Pour the batter into the greased crown mould and level the surface with a spatula. Lightly tap the mould on the table to remove air bubbles. Cover with another baking paper and place another baking tray on top to act as a weight.
  6. Baking: Place the baking tin in a preheated oven and bake for 35-40 minutes, or until a toothpick inserted in the centre comes out clean. Leave to cool for a few minutes before removing from the tin onto a wire rack.
  7. Decorate: Once cool, decorate the wreath with chocolate chips and, if desired, with a chocolate glaze for an extra sweet touch.
