Chocolate cake with meringue is a classic dessert that combines the intense flavour of chocolate with the soft and fluffy texture of meringue. It is ideal for any celebration or for a sweet treat on a special afternoon. Perfect for sharing and to conquer those with a sweet tooth.
Ingredients (for 8 people):
- For the base:
- 200 g Digestive biscuits
- 100 g melted butter
- For the chocolate filling:
- 200 g dark chocolate (minimum 70% cocoa)
- 200 ml whipping cream
- 3 egg yolks
- 50 g sugar
- For the meringue:
- 3 egg whites
- 150 g sugar
- 1 pinch of salt
Elaboration:
- Prepare the base: Crush the biscuits into fine crumbs. Mix them with the melted butter until you obtain a homogeneous dough. Place this mixture in the base of a springform pan, pressing it well so that it is compact. Set aside in the fridge while you prepare the rest of the cake.
- Prepare the chocolate filling: Chop the dark chocolate and melt it in a bain-marie or in the microwave in short intervals to prevent it from burning. In a saucepan, heat the cream over medium heat until it starts to boil, and pour it over the melted chocolate, stirring well. Add the egg yolks and sugar, and continue whisking until the mixture is smooth and even. Pour this mixture over the biscuit base and bake in a preheated oven at 180°C for about 25-30 minutes or until the filling is firm. Allow to cool completely before adding the meringue.
- Prepare the meringue: Beat the egg whites with a pinch of salt until foamy. Add the sugar little by little, beating continuously until you obtain a firm, glossy meringue that forms peaks. Pipe the meringue into a piping bag and decorate the cake with criss-crossed lines, forming a lattice.
- Bake the meringue: Return the cake to the oven at 200°C with the broiler only for 3-5 minutes or until the meringue is lightly browned. Keep a constant eye on it to prevent burning. Let cool before unmoulding and serving. You can also use a kitchen blowtorch to brown the meringue, it's quicker and you can control it better.
