Chickpeas with prawns is a traditional Spanish dish that combines the mildness of pulses with the intense flavour of seafood. This stew is perfect for cold days and for those looking for a comforting and flavourful meal.
Ingredients (for 4 people):
- 400 g dried chickpeas
- 500 g fresh prawns
- 1 large onion
- 1 red pepper
- 1 green pepper
- 2 ripe tomatoes
- 3 cloves garlic
- 1 bay leaf
- 1 teaspoon sweet paprika
- 1 litre fish stock (preferably homemade)
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Elaboration:
- Soaking the chickpeas: The night before, place the chickpeas in a bowl with plenty of hot water and soak for at least 12 hours. The next day, drain and set aside.
- Prepare the prawn stock: Peel the prawns, reserving the shells and heads. In a pan, heat a little olive oil and fry the shells and heads for a few minutes. Add a litre of water and boil for 15-20 minutes. Strain the stock and set aside.
- Vegetable stir-fry: In a large pan, heat the olive oil and sauté the finely chopped onion, peppers and garlic until soft. Add the peeled and chopped tomatoes and cook until a thick sauce forms.
- Add the chickpeas and stock: Add the drained chickpeas to the sauce, mix well and add the paprika. Pour in the strained prawn stock and bay leaf. Cook over a medium heat for about 1.5 hours, or until the chickpeas are tender. If necessary, add more stock or hot water during cooking.
- Add the prawns: When the chickpeas are cooked, add the peeled prawns and cook for a further 5 minutes, until done. Season to taste with salt and pepper.
- Rest and service: Leave the stew to rest for a few minutes before serving. Garnish with chopped fresh parsley and serve with crusty bread.
Additional advice:
- If you prefer to save time, you can use canned cooked chickpeas. Rinse them well before adding them to the stew and reduce the cooking time accordingly.
- For a more intense flavour, you can add a chilli pepper to the stir-fry if you like a spicy kick.
- This dish gains in flavour if prepared in advance and left to rest, allowing the flavours to integrate better.
